Staal, Crosby & Malkin

The Winter Classic 2011 in Pittsburgh may not have been won by the Penguins, but I certainly didn’t leave disappointed. Sitting in the second row, in the section closest to the Pittsburgh Penguins locker room, I was able to take some great photos of our boys in “blue” that day. This particular photo of Sidney Crosby, Evgeni Malkin and Jordan Staal is one of my favorites. I hope you enjoy the others — CLICK HERE!

1 large zucchini
1lb sweet italian sausage
1 sweet onion
2 large tomatoes
4-5 cloves of garlic
1 can white/northern beans
1 bunch escarole
parmesan cheese
salt & pepper
EVOO

1. Cut zucchini in half lengthwise, then scoop out the seeds and flesh, reserving flesh without seeds, leaving about a half inch all around to create your zucchini boat. Brush flesh with olive oil and season with salt & pepper. Put flesh side down and roast in a 350 degree oven for approx 20 minutes, or until slightly tender.
2. While zucchini is roasting, brown sweet sausage until some is browned and crispy.
3. Slowly cook the onions, garlic, reserved-chopped zucchini flesh and tomatoes in the pan with the juices/grease from the sausage.
4. Add chopped escarole and northern beans until the greens cook down.
5. Add sausage back into the mixture. Season with salt & pepper to taste
6. Fill zucchini boats with greens & beans mixture and top with parmesan cheese. Bake until cheese is melted.
